Sam's Town spent the summer of 2026 quietly renovating itself. A new restaurant opened on Boulder Highway in July. The race and sports book got its first real update since 2007. If you live in Sunrise Manor and drive past the property a few times a week, you've probably noticed the construction tape came down and something changed. STG Bar & Grill is part of a gastropub concept Boyd Gaming has introduced at several Las Vegas properties, with Sam's Town among its newer locations.
The refresh includes the new restaurant and updates to the sportsbook. Here's what to know about each before planning a Tuesday night or Sunday morning at Sam's Town.
The Gastropub Boyd Keeps Building
STG stands for Sam's Town Gastropub, and the name gives away the formula before you sit down. Boyd Gaming has been rolling the same concept out property by property across the valley for a few years now. Bailiwick All American Pub + Eatery opened at The Orleans. 90 Ninety Bar + Grill landed at Suncoast. Charter 75 Modern Kitchen went into Gold Coast. Tin Lizard Bar & Grill opened at Boyd's newest property, Cadence Crossing Casino. STG Bar & Grill at Sam's Town is the same idea in a different building, and Boyd has already said more are coming to Fremont Hotel & Casino and Aliante Casino + Hotel + Spa.
STG is one of several versions of the concept at Boyd properties, following four earlier locations. The space itself shows real money went into it. Herringbone wood floors, brick walls, and corten steel paneling set an industrial foundation, and a custom steel and concrete decorative screen with linear light accents anchors the center of the room. Crystal chandeliers hang over half-round booths, which is a strange combination on paper but reads as intentional in person. The restaurant seats a full dining room plus a 21-seat bar and a 14-seat private dining room, and it's positioned inside Sam's Town next to Roxy's Lounge, close enough to the table games that you can wander over between hands.
Executive Chef Gabino Garcia is running the kitchen, with food and beverage director Joseph Martin shaping the broader concept. The menu runs breakfast through dinner. Morning options include loaded oatmeal with fresh berries and a cinnamon roll with cream cheese icing, along with heavier plates like huevos rancheros layered with corn tostadas, refried beans, ranchero sauce, pico de gallo, and chipotle crema. Lunch and dinner lean toward comfort food done a notch above the usual casino coffee shop: a shrimp cocktail with bay shrimp over shredded lettuce, a backyard burger on a griddled potato bun, hash and eggs with corned beef hash and poached eggs available any time of day. None of it is trying to be a destination restaurant. It's built to be the place you eat three times in one week without getting bored, which for a locals casino is exactly the right ambition.
Sportsbook Updates at Sam's Town
Casino.org reported on the renovation of Sam's Town's sportsbook, which sits right next to STG. The space hadn't been touched since 2007, and the update added a second big screen, more TVs throughout, betting kiosk stations, and seating in place of the old horse racing carrels.
Regulars have pointed out that some lounge chairs are not new, have ripped seams and worn cup holders, and differ from the chairs on the other side of the room. The carpet wasn't replaced. The old light board that used to display odds is gone, replaced by odds shown on the same TV screens showing the games, which longtime patrons say makes the numbers harder to track at a glance than the format it replaced.
None of this ruins the space. It's still more functional than what was there before.
Mystic Falls Still Runs on the Old Clock
The one part of Sam's Town that didn't need reinventing is the one that's been drawing people in for decades. Mystic Falls Park sits in the center of the property under a ten-story skylight, with a rolling waterfall, live trees, and animatronic wildlife that make it easy to forget you're standing in the middle of a casino floor. Several times a night, the atrium becomes the stage for Sunset Stampede, a laser and water show set to a score recorded for Sam's Town by the Indianapolis Philharmonic Orchestra. Showtimes run Monday through Thursday at 6, 8, and 10 p.m., and Friday through Sunday add a 4 p.m. show. It's free, it takes about twenty to forty-five minutes including a walk through the park, and it doesn't require a reservation, a hotel stay, or a casino play card.
Ram's Head Bar sits inside the park itself, which means you can watch the water and lasers with a drink in hand without ever leaving the atrium. It's the kind of thing that's easy to take for granted if you've lived near it for years, but for an evening that costs nothing and takes under an hour, it's still one of the better free things happening on this side of the valley.
The Rest of the Loop
Sam's Town doesn't sit alone on Boulder Highway. The stretch of Boulder Highway and Nellis Boulevard around it holds one of the more genuinely local restaurant scenes in the valley, built by families cooking for their neighbors rather than for tourists. Xolo Tacos and Tacos Los Gueros both draw steady local crowds for birria and quesabirria, the kind of dish that rewards a short wait. Antojitos Sinaloa leans into regional Mexican specialties that don't show up on Strip menus. Los Olivos Ristorante covers the Italian side of the corridor, Soru Ramen Sushi & Seafood handles the Japanese end, and Sunrise Casablanca and The Great Greek Mediterranean round out a strip that covers more ground than its size suggests.
These established restaurants offer long-running neighborhood dining alongside Sam's Town's new gastropub.
What This Actually Means for a Night Out
If you're planning an evening around Sam's Town this fall, here's what to keep in mind. Eat at STG if you want a menu that's genuinely been thought through. The sportsbook renovation includes screens, TVs, kiosks, and seating. Time a walk through Mystic Falls Park around one of the evening Sunset Stampede shows, since it's still free and still worth the twenty minutes. And if STG doesn't sound right for that particular night, you don't have to leave the neighborhood. Boulder Highway and Nellis have been feeding this part of Sunrise Manor for years, one taqueria and one ramen counter at a time.
